Signature Recipe: Shahi Veg Biryani

Spices Used: Shahi Biryani Masala – The Masala Mandi

Ingredients

  • 1 cup basmati rice (soaked for 20 minutes)
  • 1 cup mixed vegetables (carrot, beans, peas, potato)
  • 2 onions (sliced)
  • 2 tsp The Masala Mandi Shahi Biryani Masala
  • 1 tbsp curd
  • 1 tsp ginger-garlic paste
  • 2 tbsp oil or ghee
  • Salt to taste
  • Whole spices: 1 bay leaf, 2 cloves, 1 small cinnamon stick
  • Saffron milk (optional)
  • Fried onions and mint leaves (for garnish)

Instructions

  1. Parboil the basmati rice with salt and whole spices. Drain and set aside.
  2. Heat oil or ghee in a pan and sauté sliced onions until golden brown.
  3. Add ginger-garlic paste and cook for 1 minute.
  4. Add mixed vegetables, curd, and Shahi Biryani Masala. Cook for 5–7 minutes.
  5. Layer rice and vegetable masala in a heavy-bottomed pot.
  6. Top with saffron milk, fried onions, and mint leaves.
  7. Cover and cook on low heat (dum) for 15 minutes.
  8. Fluff gently and serve hot.
