Signature Recipe: Slow-Cooked Mutton Curry

Spices Used: Mutton Masala – The Masala Mandi

Ingredients

  • 500g mutton (bone-in)
  • 2 onions (sliced)
  • 1 cup curd (whisked)
  • 2 tomatoes (pureed)
  • 1 tbsp ginger-garlic paste
  • 2 tsp The Masala Mandi Mutton Masala
  • ½ tsp turmeric powder
  • Salt to taste
  • 3 tbsp oil
  • Whole spices: 1 bay leaf, 2 cloves, 1 black cardamom
  • Fresh coriander leaves (for garnish)

Instructions

  1. Heat oil in a pressure cooker. Add whole spices and sauté briefly until aromatic.
  2. Add sliced onions and cook until golden brown.
  3. Add ginger-garlic paste and cook for 1 minute.
  4. Add tomato puree and cook until oil separates.
  5. Add mutton pieces, turmeric powder, salt, and Mutton Masala. Mix well.
  6. Add whisked curd, stir well, and cook for 2 minutes.
  7. Add about 1½ cups water and pressure cook for 4–5 whistles.
  8. Garnish with fresh coriander leaves and serve hot.
